Title: Salmon with Mustard Sauce #2

Yield: 4 Servings

1ts+2 Tbsp. butter or
  Margarine -- divided
1/2tsSalt
1/4tsPepper
4 Salmon steaks -- about 1/
1/2 Lb
4tsAll-purpose flour
3tbWhite wine
2tbGrainy Dijon mustard
1/2cMilk

In large nonstick skillet, melt 1 tsp. butter over Medium-High heat. Combine salt and pepper; sprinkle over salmon. Add fish to skillet; cook until fish flakes easily with fork, about 5 minutes per side. Meanwhile, in small skillet melt remaining buttero ver medium heat. Gradually add flour. Cook, stirring constantly, until mixture is smooth. Add wine and mustard. Cook, stirring until combined, about 1 minute. Redue heat to Medium-Low. Slowly stir in milk until smooth, about 1 minute. Continue cooking until sauce thickens, 1-2 minutes. Serve over salmon. Makes 4 servings.
